The cookie jar in my kitchen was empty and had been for some time now. Since my dear hubby enjoys home baked cookies I decided to fill the jar up.
It has been unusually hot here in CA so I went looking for a quick recipe for Chocolate Chip Cookies.
It is better to do them early in the morning while it is still cool and the windows are open. Also when you are finished baking open the oven door to cool off quickly while the windows are open.
The Bisquick Chocolate Chip Cookies recipe I found calls for Heart Smart Bisquick Mix. Since I make my own "Low Fat Baking Mix" (HERE), I used it. I cannot have chocolate with Afib, so dear hubby was my taste tester. He said they were good making this recipe a keeper.
It was also a very quick recipe to prepare.

The original recipe says it make 24 cookies. The little cookie scoop I have made 41 cookies. I would estimate that the scoop is about 1

Now watching him eat cookies is not going to work unless I have some cookies to eat too. So two batches of cookies were in order. The next recipe for me was Peanut Butter Oatmeal Cookies. Being borderline diabetic most recipe I choose have whole grains in them. This recipe had only whole wheat pastry flour and oats as the grains in them.

This recipe held up really well after baking. Sometimes with whole grains the end product crumbles a lot. These cookies stayed together very well. The original recipe said 34 cookies and I got 38 with the mini cookie scoop.
